What I’ve Eaten

  • Eggplant Parm(ish) dish – breaded eggplant layered with fresh tomato sauce, topped with mozzarella
  • Salsa (x2)
  • Scrambled Eggs with Peppers, Zucchini, Garlic, sharp cheddar and topped with…
  • Stewed Cherry Tomatoes
  • Tomato on Toast
    Puréed summer squash soup
  • Roasted veggies (onion, potato, fennel, carrots) and chicken thighs
  • Stir fried veggies (radish, turnips, peppers, broccoli) over white rice

 


It’s been a little over a week since my last post and I’ve got plenty of lovely pictures to share!

First and foremost – continuing on my “Animals of 63rd Street Farm” collection…

Someone was less than thrilled about the photo-shoot that I embarked (heh!) on. (That one’s for you, Jack.)

Aileen was in town recently for a spontaneous mental health trip and we spent wandering around downtown, exploring the Farmer’s Market. A fairly average weekend.

And this past weekend two great things happened. First off, fall is gracing us with her presence in the form of chilly mornings and stunningly bright Aspens. And, if I’m not mistake, it will officially be Autumn this week and winter squash is on its way. My heart is happy.

The second (and more important) exciting occurrence – my parents were in town!

We spent our time drinking lots of beer, riding bikes, and venturing into Rocky Mountain National Park.

The parental units are currently off exploring Wyoming, Montana, North Dakota, South Dakota and Nebraska before they return to me on Friday. I’m fairly envious.

Next weekend, before they depart, we’ll be enjoying Oktoberfest 🙂
